¿Por Qué decantar un vino?
La decantación (verter un vino de su botella a otro recipiente, generalmente una jarra de vidrio) es la mejor manera de maximizar el aroma y el sabor de un vino. Casi todos los vinos se benefician de la decantación.
Los vinos con largas crianzas, desarrollarán sedimentos, depósitos sólidos (Pueden ser lías, partículas de color, compuestos fenólicos, taninos o hasta restos de hollejo) durante su maduración, y la decantación es el mejor método de eliminarlos. Pero la decantación también sirve para resaltar el sabor y el potencial de cualquier vino.
Al decantar hay que ir vertiendo lentamente el vino en la jarra o decantador, hasta que vean que el sedimento del vino va quedando en el hombro de la botella. Otro método alternativo es utilizar un Vinturi, que permite eliminar los sedimentos y oxigenar el vino de una manera más rápida.
Hay opiniones de todos los tipos, unos dirán que al decantar, los vinos frágiles perderán gran parte de su aroma, pero otros argumentarán que los vinos necesitan "despertarse" sobre todo los que han reposado varios años dentro de la botella.
